Peanut Butter Bars

Natural Gluten Free Peanut Butter Bars
*modified from Real Simple Magazine cookies(July 2012)
Ingredients
• 2 cups creamy peanut butter
• 1 cup almond butter
• 1 ½ cup packed light brown sugar
• 1 ½ cup granulated sugar
• 3 large eggs
• 3 teaspoons baking soda
• 1 teaspoon salt
• 1 teaspoon vanilla
Directions
1. Heat oven to 350° F. Line sheet cake pan with parchment paper.
2. Mix all the above ingredients in mixer until mixed well. Texture should be sticky and can roll into teaspoon size balls easily.
3. Press dough into cookie sheet cover the entire bottom of pan with cookie dough.
4. Bake, until puffed and golden, 15 to 18 minutes (the cookies will deflate as they cool). Let cool slightly while preparing chocolate topping.
Chocolate topping
2 cups semi sweet chocolate chips
½ cup butter
1.Melt in microwave both the above ingedients for 1 minute. Pull out and stir. Melt in microwave for another 30 seconds, stir and repeat until all melted. It shouldn’t take more then 2 minutes in the microwave to melt smoothly.
2.Pour over the Peanut Butter Bars and smooth over the top and cover the whole top and smooth out chocolate.
