Lemon Poppy Seed Muffins or Bread

Ingredients:

 

Dry Ingredients: Mix all dry ingredients together.

1 box Pillsbury Yellow Cake Mix

¼ Cup Brown Sugar

2 Teaspoons Baking powder

1 Teaspoon Xanthan Gum

½ tsp salt

Zest of 1 Lemon

 

Add wet Ingredients: then mix.

½ cup Earth Balance butter, melted

3 Eggs

½ cup lemon juice

1 ½ cup coconut milk

2 teaspoons vanilla

1 Tablespoon poppy seeds

 

Scoop into prepared muffins tins or into bread pans.

 

Cook at 350 for 22-25 minutes for muffins and 25-30 minutes for bread.

 

Cool.

 

Icing:

¼ teaspoons melted butter

1 cup powdered sugar

2 teaspoons vanilla

3 Tablespoons coconut milk

 

Drizzle over cooled muffins or cooled bread.
