CREAMED CORN BREAD

Ingredients:

2 cups yellow cornmeal

1 teaspoon kosher salt

1 tablespoon sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1 cup buttermilk or unsweetened coconut Milk with 1 TBSPN lemon juice

2 eggs

1 cup creamed corn

1 TBSPN honey

2 tablespoons oil


 Directions:

1-Preheat oven to 425 degrees.2-In a bowl, combine the cornmeal, salt, sugar, baking powder, and baking soda. Whisk all ingredients together and set aside.

3-In mixing bowl, combine the buttermilk, eggs, and creamed corn and oil, combine thoroughly. 

4-Add all the dry ingredients to the buttermilk mixture and mix to combine. 

5-If the batter will not pour, add more buttermilk to the batter.

6-Spray a 13 x 9 glass pan.  Pour dough into pan and spread evenly.

7-Bake at 425 degrees for 20 minutes.
