Loaded Baked Potato Soup
Gluten and Dairy free
Step 1:
¼ of a onion, chopped
12 medium yellow golden potatoes, peeled and cubed
1-32 oz container vegetable broth
4-5 cups water (enough to cover potatoes)
1-Place in a large sauce pan and boil for 30-40 minutes or until potatoes are very soft.
2-Take out half the potatoes and half the liquid left in pan and puree in blender. Pour into crockpot.
3-Take the remaining potatoes in pan and smash up with a fork. Pour into the crockpot also.
Step 2:
1 package (12 oz) bacon, cooked and crumbled
1-32 oz container vegetable broth
1 cup Earth Balance Butter
2 cups unsweetened coconut milk
(2 cups water) add water only until soup texture
1 Tablespoon salt (or more if needed)
2 teaspoon coarse pepper
1 teaspoon garlic
1 teasponn onion
3-Add all the above ingredients into crockpot and stir until mixed. Adjust water as needed.
4- Cook on high in crockpot for 2 hours.
